Ingredients

Brinjal - 6 nos(clean and cut into four,place them in water for ten minutes)
Onion - 1nos.
Capsicum - ½ nos.
Tomato - 2 nos.
Ginger Garlic paste - 2tbsp.
Tamarind water - as needed.
Garam masala - ½ tbsp.
Green chilly - as needed.
Turmeric powder - ¼ tbsp.
Kashmiri Chilli powder - 2tbsp.
Coriander powder - ½ tbsp.
Pepper powder - ¾ tbsp.
Cashew paste - 3 tbsp.
Coriander leaves - to garnish


How to make tomato puree

Boil water in a pot. Add the tomatoes. Cover and cook the tomatoes until the skins begin to split. Remove the tomatoes from the boiling water. Peel the skins off the tomatoes when it's cold. Puree the peeled tomatoes in a blender without adding water.

Method

In a bowl mix together brinjal, salt, pepper powder. Let it rest for 10 minutes.

Heat oil in a pan. Add brinjal to the pan. Turn heat to medium. Fry brinjal. Move to a bowl and keep aside.

Add onion, ginger garlic paste, green chilli to the same oil. Saute for a couple of minutes.

Turn heat to medium. Add turmeric powder. Saute for a minute.

Add coriander powder,saute for a couple of minutes.

Add chilli powder, saute till fried.

Add tomato puree with enough water for the curry. Turn heat to high. Add capsicum, fried brinjal, cashew paste. Mix well. Once the gravy starts boiling add tamarind water.

Add garam masala. Turn heat to medium. Cover and cook for about 10 minutes. Boil till the desired consistency is reached. Switch off flame. Garnish with coriander leaves and enjoy!!!
